From grapes to wineDuring harvest the grapes are selected for optimum
ripeness and then picked by hand to ensure that only the finest fruit
arrives at the cellar.The grapes are lightly pressed and after between 24 and 48
hours the juice is poured into stainless steel tanks for fermentation.By carefully controlling all aspects of the fermentation
process we ensure that the wine has stability with minimal use of
sulphur dioxide.The grape characteristics are fully developed and the wine
exhibits those aromas and flavours so typical of the Gavi Denomination
including the ability to develop complexity with time.
Tasting notesBright appearance with a lemon citrus aroma, well
integrated fruit flavours and a long finish. Modest bottle ageing brings
a softening acidity and a balancing minerality.
Suggested food pairings Optimal serving temperature is between 10 and 12 °C.Our Gavi is an ideal aperitif and complements appetisers
of oysters, seafood, cured meats and vegetables. A particularly good
combination is the elegant and delicately flavoured "Risotto al Gavi".The wine is traditionally served with fish, omelettes and
other light dishes often accompanied by "focaccia" (Italian flat bread).
